Welsh Cookies

Dad says his mother used to make these cookies.  Mom makes them and everybody thinks they're delicious!

Ingredients

2 cups all-purpose flour
2 tsp. baking soda
pinch of salt
1/2 cup white sugar
1/4 cup butter
1/4 cup shortening
1/2 cup dried currants
1/4 cup milk
1 egg

Combine all dry ingredients.  Using a pastry cutter, blend in the butter and shortening until mixture is crumbly.  Add currants.  In a small separate bowl, beat the egg and and milk together.  Add to flour mixture and gently combine just until a dough forms.  Roll out dough to about 1/4" thickness (using a floured rolling pin and board).  Cut with a 3" round cookie cutter.  Heat up a griddle over medium heat until water drops jump and spatter.  Cook for about 2-3 minutes on each side, until golden brown.  Can be frozen.
