Bananas Foster

One of Mike's favorites.  He was in charge of the bonfires in high school.  Serves 2.

Ingredients
3 tbsp. brown sugar
a few pinches of cinnamon
2 tbsp. butter
1 banana, peeled and quartered
1/4 cup rum
2 tbsp. banana liqueur
1 tbsp. lemon juice
1 broom

Melt the butter over medium heat.  Stir in sugar and cinnamon.  When it starts to bubble, add banana and lemon juice and cook about 4 more minutes, basting the banana with syrup.  In a separate pan, warm the liqueur and rum a bit, then ignite it.  Pour it, flaming, over the bananas and baste some more until the flames go out.  Turn off the smoke detector with the broom and serve immediately.
